General Comments- The operation used salt with anti-caking (yellow Prussiate of Soda), which is not considered an additive according to the label; this salt is treated as regular salt. The expectation of using a food additive has been discussed with the person in charge (PIC); no additive was found during the curing meat procedure. The specialized process was also discussed with the operator, and the operator was reemphasized to contact the environmental consultant before implementing the specialized process that prolongs the product shelf life due to the variance requirement, the salted cured beef stored in the walk-in cooler for 7 days and continue to stored in the freezer until sale. - No handwashing conveniently located near the bread-making station, and it is not convenient to wash their hand before handling bread (RTE). Discussed the matter with the person in charge (PIC).
