Both the inspectors thermometer and the PIC thermometer was calibrated with an ice water bath to make this determination. Inspector's thermometer read 32F and PIC thermometer was 22F. Food thermometers shall be accurate to +/- 2 degrees Fahrenheit. CDI- Permit has been immediately suspended due to refrigeration issues, this item will be verified once permit suspension is lifted.

Provide an approved water source for use. CDI- permit has been immediately suspended due to refrigeration issues, this issue will be verified once suspension has been lifted.

Sewage shall be removed from a mobile food unit at an approved servicing area. CDI- MFU has been immediately suspended due to another issue (see above). In that timeframe the mobile food unit must be able to demonstrate that they are able to take the truck back to their approved commissary to dispose of wastewater. The City of Raleigh was also contacted due to the improper waste disposal.
