General CommentsTCS* foods: Time-temperature control for safety foods...DISCUSSION: Quaternary ammonium (QA) sanitizer coming out of dispensing hose at 3-compartment sink was too strong (500+ ppm). Should be 200-400 ppm. Adjust sanitizer-water mixture so QA sanitizer is dispensed at 200-400 ppm from red hose...Re-train workers on when/how to wash hands, proper glove use, etc.
