4-501.14; Core; Three compartment sink needs some cleaning, clean drainboard has food residue and sink basins have residue buildup. Warewashing equipment, the compartments of sinks, basins, drainboards or other receptacles used for washing and rinsing equipment shall be cleaned before use and at a frequency necessary to prevent recontamination, and at least every 24 hours. Clean the three compartment sink more frequently. |
