4-501.14; Dish sprayer hanging at three compartment sink soiled with residue buildup along inside sprayer part. Warewashing machines and the compartments/drainboards of sinks and other Warewashing equipment used for washing and rinsing equipment, utensils, raw food, etc. shall be cleaned before use, throughout the day to prevent recontamination of equipment and utensils, and at least every 24 hours if used. Manager cleaned sprayer during inspection. Outside of dish machine much improved on cleaning from previous inspection. |
