3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. (P): Sliced deli meats from this morning are holding above 41F inside grab & go cooler. Cooler was observed to have a drastically fluctuating ambient temperature and inconsistent air flow from top portion of vents. CDI: Cooler taken off line and deli meats moved to walk-in cooler to rapidly cool. PIC contacted repair service during inspection. |
