4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P)
Quaternary ammonium sanitizer in the ware washing sink is 52 degrees F. Quat is required to be at a minimum temperature of 75 degrees F. There seems to be confusion about cooling the solution to test using test strips. The test strips do not describe the use temperature.
On the inspection report from Dec 2, 2022 the following violation was documented: 4-501.114; Priority; Quat sanitizer in three comp sink was measured to be 59F - 60F. A quaternary ammonium compound solution shall have a minimum temperature of 75F. CDI- Quat remade with warmer water.
Manager Justin is contacting Diversy and providing the Federal Food Code section pertaining to temperature. Seafood manager drained the sink and mixed new sanitizer using warm solution. |

4-903.11(A)(C) Plastic wrap and packaging equipment is stored to the left of the handwashing sink and directly under the paper towel dispenser. Store single-use and single-service articles in a clean, dry location; where they are not exposed to splash, dust, or other contamination. Manager put in a work-order to relocate the paper towel dispenser to the right of the handwashing sink, where chemicals are stored and away from the plastic wrap. |
