General CommentsSanitizer use temperature shall be at least 75 degrees F. There is confusion about the test strips stating temperature 65F to 85F which describes testing temperature and the poster that specifies cooling of sanitizer to test it. 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness. (C) A quaternary ammonium compound solution shall: (1) Have a minimum temperature of 24oC (75oF), P (2) Have a concentration as specified under § 7-204.11 and as indicated by the manufacturer's use directions included in the labeling, P and (3) Be used only in water with 500 MG/L hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; P note: Quat less than 75 degrees F in use is a priority violation that requires correction Handwashing Sink where employee is actively working is completely dry, indicating lack of use. Teach employee to wash his hands before donning gloves, before working with food, when reporting to work in the seafood department, etc.

Quat is required to be at a minimum temperature of 75 degrees F. There seems to be confusion about cooling the solution to test using test strips. The test strips do not describe the use temperature. On the inspection report from Dec 2, 2022 the following violation was documented: 4-501.114; Priority; Quat sanitizer in three comp sink was measured to be 59F - 60F. A quaternary ammonium compound solution shall have a minimum temperature of 75F. CDI- Quat remade with warmer water. Manager Justin is contacting Diversy and providing the Federal Food Code section pertaining to temperature. Seafood manager drained the sink and mixed new sanitizer using warm solution.

Manager put in a work-order to relocate the paper towel dispenser to the right of the handwashing sink, where chemicals are stored and away from the plastic wrap.
