3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food, Disposition (P) Containers of prepared curries, vegetables, and other temperature controlled for safety (TCS) foods were not labeled with the dates of preparation within front prep coolers. Some of these food items had bulk containers bearing labels within walk-in cooler, but a majority did not have bulk containers. TCS foods shall be date marked on their prep/open date, and they shall be held for a maximum of 7 days. REHS explained that these containers must be labeled either at a bulk container or on the individual container itself. PIC stated he will begin labeling each individual container. CDI: Labels were added to each prepared food item. |
