3-304.14(B) Sanitizer Bucket with towel in it has nearly undetectable level of sanitizer. Hold in-use wiping cloths in properly concentrated sanitizer between uses. Sanitizer is dispensing from the sink at proper concentration. Monitor sanitizer in the towel buckets. Quat should not be unstable or "disappear". Use test strips daily and make adjustment as needed. Sanitizer was replaced today. |

4-501.12 Cutting Surfaces (C) Long Cutting Board for the make line refrigerator has a lot of dark cuts on both sides and leading edge. Replace the cutting board if it can no longer be effectively cleaned. Discussed intense scrubbing with metal scrub pad and use of block whitener today. Manager is also considering having the cutting board resurfaced. |
