Quickly cool foods using methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. If foods require cooling after being thawed, ensure they are cooled to 41F within 4 hours after thawing and use rapid cooling equipment. The TCS food shall not be kept above 41F longer than 4 hours. Do not overstock product above fill lines of containers. CDI- cod was moved to the walk-in to chill and replaced with cod that was already cold. PIC indicated fish was thawed under running water shortly before inspection.

The bottom of the reach-in freezer has food debris as well. Speed rack in walk-in cooler has residue accumulation. The nonfood-contact surfaces of equipment shall be kept free of dust, dirt, food residue and other debris accumulation. Increase cleaning frequency of refrigeration equipment, especially the back of the unit. Employee started cleaning during inspection.
