Quickly cool TCS foods using methods such as open/vented shallow pans and rapid cooling equipment. Cold air must flow around product to remove the heat. CDI- cut lettuce was placed in the freezer to flash cool. No point taken. |

Multi-use food-contact surfaces shall be smooth, free of cracks, chips, inclusions, pits, and similar imperfections. These can no longer be effectively cleaned/sanitized. CDI - lids were removed for discard by PIC. |
