A food employee was observed turning the hand sink faucet handles with her hands after she had just washed them. Food employees shall clean their hands immediately before engaging in food preparation (including working with exposed food, clean equipment/utensils, and unwrapped single-use items) and after engaging in other activities that contaminate the hands. 4-302.13 (B) Temperature Measuring Devices, Manual and Mechical Warewashing (Pf)
No hot water sanitizing test strips or other irreversible temperature device were provided to assess the restaurant’s hot water sanitizing dishwasher. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. The manager stated that the restaurant had recently placed an order for additional hot water sanitizing test strips. The REHS provided a few of their own hot water sanitizing test strips to the manager until the restaurant received the ones they ordered. CDI |
