Observed the sandwich line cooler for to-go orders holding product above 41F. CDI-The lettuce and the tomatoes were brought back to the walk in cooler to rapidly cool down to 41F. Manager explained that they had the compressor replaced and is still working out the proper temperature for the unit to maintain product at 41F and below. The unit was turned down. |
