4-601.11 - Few plastic storage bins and utensils have not been cleaned thoroughly - CDI: moved to utensil washing area to be washed, rinsed, and sanitized again. Food contact surfaces shall be thoroughly washed, rinsed, and sanitized after use and be visibly clean. For those utensils that are not used frequently on back shelving and the ones in the junk drawer, it is strongly suggested to wash, rinse, and sanitize them, and put them in bins with lids or wrap them in plastic wrap to keep them clean. Also, if they are not used, remove them from the premises.
4-602.11 - Two pans for holding food for very short time from the time it is removed from cooking until it is put in hot holding are used on-and-off for 8 hours - CDI: these two pans taken out of use and put in utensil washing area to be washed, rinsed, and sanitized. These shall be used for no more than 4 hours at the time before being washed, rinsed, and sanitized. Strongly suggest getting back-up pans for this purpose. |
