Time/temperature control for safety food shall be held at 41F. CDI: The chicken had been placed on the cooler for less than 4 hours. Staff was asked to relocate the chicken to the walk in cooler and to make sure to only use the back of the grab and go cooler from now on.

Store single use items in a way that prevents contamination when removed from their original packaging.
