General CommentsObserved items reheating that likely would not have reached proper reheating time and temperatures without EHS intervention. At start of inspection, PIC stated that items were reheating on low at steam well and had been reheating for about 45 minutes. EHS rechecked temperature after 1 hour and items were still very far from reheating temperatures. EHS recommended that PIC reheat items on stovetop, items met temperature parameters in appropriate amount of time. Observed raw items in top half of cold drawers and RTE items on bottom half of drawers. Although raw items were not stored directly over RTE items, EHS recommended that PIC correct storage order to avoid any potential contamination. Observed slight dark buildup in ice machine. EHS recommended increased and more thorough cleaning frequency.
