22 0 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P -Observed multiple items in make table and make-table lowboy above 41F (coleslaw, sliced turkey, diced tomatoes, corn, turkey sausage, turkey bacon). From the date mark sticker on each container, all food items above 41F were prepped this morning, approximately one hour ago. After prepping TCS foods, ensure they are cooled down to 41F or below using the freezer to rapidly cool, before placing them in the make table or low reach-in cooler. Make tables and low reach-in coolers are not efficient at cooling foods; their purpose is to maintain cold holding temperatures. All other foods in the make table and low reach-in cooler were properly cold holding at or below 41F. -CDI- PIC moved all foods above 41F (coleslaw, turkey, tomatoes, corn, turkey sausage, turkey bacon) to the reach-in freezer for rapid cooling. By end of inspection, EHS observed foods cooling at sufficient rates to reach 41F within 4 hours of prep. 39 0 Contamination prevented during food preparation, storage & display Yes No No 6-404.11 Designate a separate area for items that are not for use and are being held for credit, such as dented cans or recalled products. -Pf -Observed heavily dented can stored along food intended for consumer use in dry storage. -CDI- PIC moved dented can to separate area, not to be used. Do not use heavily dented cans.
