General CommentsEHS recommended that sauces such as crema and housemade sauces stored in squeeze bottle be stored in bottom portion of prep unit, not filling them up as much and storing on an ice bath (as long as it is in a way to prevent entrance of water into top/exposed part of bottle), or maintain items on TPHC. EHS also educated PIC on not filling up individual sauce containers too high in salsa prep unit as items were above fill line and not maintaining temperatures. EHS provided blank TPHC form for housemade sauce held at cook line and provided update EHP. EHS educated PIC about best practicing of not maintaining cloths on the side of clothes/aprons as these are often used for wiping gloved hands which later become food contact surfaces. This was observed at today’s visit.
