Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf. Observed no procedures for items held on time in facility during inspection. 33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed ranch dressing cooling in a deep cambro at an inadequate rate. EHS observed whole chickens stored on back prep area. PIC stated these chickens are left to cool for an hour, then shredded, then placed in WIC to cool. At this point in the inspection the whole chicken was at 100F and had been sitting out for an hour and a half. Due to time window closing for cooling EHS instructed PIC to quickly shred chicken, place on sheet tray spread thin, and place in RIF to cool. CDI - EHS educated PIC on cooling methods. Ranch dressing was placed into smaller containers with no lid. Shredded chicken was placed into freezer to quickly cool.
