General CommentsOverall neat, clean, and organized kitchen! Every food employee wore hairnets while engaging in food preparation which is excellent to see! The handsink at the front serving line was missing soap.A food employee informed EHS the school hasn't place the soap dispenser yet. Soap was place on cart next to handsink. CDI.

Observed a few dishes stacked as clean with food debris on them. Dishwasher was notified and took them to be rewashed. Some dishes were contaminated by debris sitting inside the drawers or accumulated dust on the wire shelves. This indiciates better cleanliness of non-food contact surfaces is needed. CDI.

Observed steak fries on pan which were not for immediate service and prepared or opened yesterday according to a food employee. Food employee post a stick not the pans saying "From 12/16/2025" as a date mark. CDI. Ensure any TCS food left over and kept for another day get a date mark and are discarded after seven days.

Observed two dead flies sitting on a shelve above the handsink in the back of the food preparation area.

Observed food debris, crumbs, and dust inside of drawers used to hold utensils and food contact equipment. Dust debris has accumulated on wire shelves inside the food preparation area. There was a pitcher food debris on the handle. Points were accessed since dirty drawers was the root cause of many of the contaminated dishes and food contact equipment in this establishment.

Observed lids and doors to outdoor dumpster open while not in use. Keeping lids and doors to outside trashcans and dumpsters is important to prevent harboring or attracting pest to the premises.
