3-501.15 Cooling Methods (Pf). Cut lettuce was prepared at 11AM and placed into plastic containers with tight fitting lids. Cut lettuce measured 50F at 12:20PM and 12:40PM. Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI: Containers of cut lettuce were vented and measured 44F at 1PM. |
