General CommentsAlthough no cooling observed today, several foods will be cooled over next few days. Foods shall be cooled - Step 1) from 135f down to 70f within 2 hours, and then Step 2) from 70f down to 41f or below within 4 more hours. Use your thermometer to measure temps while you are cooling to determine if temperatures are dropping as quickly as needed. Use thin layers, ice baths, no lids, freezer, etc. Any of these or a mixture of these will help food actively cool quickly enough. Contact this department with any questions about cooling.
