General Comments5-501.11 An outdoor storage surface for refuse, recyclables, and returnable' s shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped enough to drain to prevent the collection of surface water. Observed grease container stored on soil at back of establishment grease is soaking into the ground. PIC stated they were not able to store it on the concrete pad as it was sloped to drain into the storm water drain. Establishment shall find a way to store grease trap on a nonabsorbent material to prevent grease from soaking into the soil.

(P) Observed chicken on a stick stored on rack at back door at 73F degrees, food was from the previous day and was left out to cool and never placed back into walk in cooler. EHS observed food employee grab bucket of chicken and place back into walk in cooler. Corrected EHS notified PIC that chicken had passed the 2 hour cooling time and that product would need to be discarded. EHS observed PIC voluntarily discarded chicken in the trash.

Only keep pre-packaged food items such as ice cream in chest freezers.

Re-soldier the vat where it is cracking using an NSF approved welder to create a smooth and easily cleanable surface or replace fixture with a similar fixture that is the same size and commercial-grade in good condition. PIC had welder repair sinks however, sink are not smooth and easily cleanable. EHS recommends to replace prep sinks and secure them properly to wall to prevent damage. Points maintained at half as PIC attempted to fix prep sinks.
