The air temperature in the case was reading between 34-38F. PIC suspected that it was going into defrost mode. Cold TCS foods shall be maintained at 41F and below. CDI-all product in the case were moved to the walk-in cooler to rapidly cool. In house maintenance was already on site and will service the machine. Advise that defrost mode be at a time when there is minimal product in the case. A follow up visit will be made next week.

The display case is only designed to maintain cold holding temperatures and should not be used as a method for cooling down food. Once prepared the product should instead be cooled down quickly inside the walk-in cooler or freezer and/or by using one or more of the approved cooling methods. CDI-by discussing that product should be cooled down. The case was in defrost mode when first approaching at 50F and then dropped to 35F. Advised to also have maintenance change this defrost time
