4-602.13 Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues. Observed grease/food buildup around the fryers, sides of stove. Clean the bottoms of all reach in ref units remove the debris buildup. Clean under the prep top lids of all prep units, under the top of the seafood prep unit. Clean and remove the food splash on the dry storage bin containers.
Remove the heavy debris from inside both the 2 door and the 3 door reach in coolers. Deep clean the fish and prep tops. Remove the grease build-up to the drying racks by ware wash area. Deep clean sides and back of stove including the top back panel. Wipe down the dish machine to remove debris. Remove the buildup on sides of equipment to include the legs of equipment. Detail clean and remove the food buildup on shelving, sides of equipment, behind equipment, on pipes, sides of dish machine, legs, carts, fronts of cabinets at waitress station. Detail clean and remove the buildup to prevent the harborage of pests.
