4-501.110 Mechanical Warewashing Equipment, Wash Solution Temperature (Pf): The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120 F. Noted Dish machine hot water 75F. Gas for the hot water is off. A repair is being done on the gas stove and fryer. Do not wash dishes until repair is done and water is 120F. CDI by end of inspection hot water was back up to 124F. |
