Per PIC there is not a specific/designated cold holding space for the facility to use resulting in this improper storage. 3-302.11 Food shall be protected from cross-contamination by separation during storage, preparation, holding, and display. P. Correction - the al pastor was moved to the bottom shelf and cold holding storage space will be made for the facility. |
