The machine failed to reach 180F and the dish surface failed to reach a minimum of 160F. 4-501.11 Good Repair and Proper Adjustment - Equipment (C) - Repair/ recalibrate the dish machine so that it reaches minimum sanitization temperature (180F on the gauge and 160F at the dish surface). The dish machine door is also leaking repair the door. The plastic handles on some of some of the utensils have melted, replace this equipment. The stopper at the sanitizing basin of the three compartment sink is leaking, repair the stopper.
4-205.10 Food Equipment, Certification and Classification (C) - Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited
