3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) In the cold prep unit, a bowl with ground beef was 51 F, a box of raw chicken wings was 60 F (box was originally spiced), and pans of sliced cheese were 56 F and 53 F. MFU had been open since reported 1:00pm. No air temperature thermometer was available. An air thermometer from the inspector was placed in the unit, and did not drop below 75 F. Discussed with the owner the need to not use this cooler for storage of TCS foods. Cheese was moved to the freezer, and raw animal foods were moved to the 1-door cooler (the air temperature stated 38 F, and no food was stored inside prior to the addition of the raw animal foods). MFU arrived at operating location at approximately 1:00pm. For TCS foods to be held cold, only use the freezer and the 1-door reach-in cooler, and keep capacity of food low enough to allow proper air circulation. |
