3-302.11 Packaged and Unpackaged Food - Separation, Packaging, and Segregation (C) Reminder, store unwashed produce below ready to eat foods during storage. Before placing produce on upper shelves above ready to eat foods, the produce must be washed. In lieu of washing the produce, it can be stored on lower shelving units where it cannot contaminate foods or clean equipment (ensure the produce is still not stored under raw animal foods).

4-901.11 Equipment and Utensils, Air-Drying Required (C) Some of the plastic containers were noted on the clean equipment shelf with water still in the containers. Reminder to employees to let utensils and equipment properly air dry before stacking them together.
4-903.11 (A), (B), and (D) Equipment, Utensils, Linens and Single-Service and Single-Use Articles Storing (C) Clean storage containers on a frequent basis so they will not accumulate debris or other food residue. Ex: Storage container that holds the serving utensils in the dry stock area.
After cleaning and SANITIZING, EQUIPMENT and UTENSILS:

4-501.11 Good Repair and Proper Adjustment - Equipment (C) The walk in freezer outside of the facility had a smaller amount of ice build up and the seal attached to the door frame was ripped at the bottom and not smooth and easily cleanable. Replace the door frame strip and defrost/chip away some of the larger chunks of ice at the door to ensure it properly closes.
Equipment shall be maintained in a state of good repair and condition. |
