3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it has not been labeled, or if the label is incorrect. -P The PIC should train and assign staff to monitor date marking to prevent the use of food products that are no longer in compliance with 3-501.17 (A), (B), or (C). Observed house made tomato based sauce dated 2/6. PIC stated since that date item had been frozen, thawed, and was in the process of being frozen on today. EHS discussed marking dates of prep/freeze to be thawed on separate day procedures to be used to ensure foods are not held longer than 7-day parameter. Observed sour cream originally opened on 2/13, per the PIC, without date labeling. CDI- PIC had dates marked on container. Observed goat cheese in 3 separate containers outside of 7 day parameter. Original prep dates included 1/20, 1/16, and 2/5. CDI- PIC voluntarily discarded items.
