3-501.15 - Cooling Methods: Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. Pf ***Corn was cooling down in the walk-in cooler, trays of corn were between 55F to 61F at 11:55am. They were stored with lids on top of the trays. CDI, PIC removed lids at 12:03pm. Corn was checked at 12:45pm, and it was cooling between a rate of .17 to .18, which is above the at least .12 rate it has to have.
3-501.11 - Frozen Food: Stored frozen FOODS shall be maintained frozen. ***Corn is being thawed, and per manufacturers instructions on the box, it is supposed to remain frozen until use. |
