Observed in several area ready to eat foods that were being cooled down in customer grab and go cases in sealed containers. Food temperatures ranged from 70F-50F. This equipment isn't for cooling but rather for cold holding. Train staff on proper cooling prior to placing into customer grab and go areas. Utilize walk in cooler/freezer and blast chiller.
