7-201.11 Separation - Storage (P)
Ensure cleaning sprays, peroxide chemicals are not stored on prep tops, utensil storage areas or above single use articles in the cutting room. Do not keep cleaners inside of the market. Peroxide, Lysol spray and spray cleaner spray removed and stored where no contamination will occur. Do not store mops inside the walk-in-freezer to precent possible contamination.

Fly lights are not to be above prep lines. Remove and place in a location where no contamination will occur. |
