General CommentsCurrent permit conditions: Cooling must be staggered and approved methods used. Cooling logs must be maintained. The production kitchen activities will take place during the week ( Monday through Thursday) and cook to order / window service will be available only on the weekend ( Friday, Saturday, and Sunday). Establishment is in violation of permit conditions. Menu changes have been made and production kitchen is working on Friday during inspection. Production is creating a capacity issue and there is not enough space to effectively cool and store foods. Additional equipment has been added for cooking and cooling. Submit following application for plan review including, updated menu and possible seasonal foods to be substituted throughout year, spec sheets for all new/additional equipment added, and new kitchen layout drawn to scale, including moveable equipment like speed racks.
