-Observation: turkey (50F) and roasted beef (50F) were the only items in cold hold unit above 41F. Shell eggs above cold line in cold hold (3) were 46F/66F.
-Corrected During Inspection (CDI): Person in Charge (PIC) was not sure why turkey and roasted beef items were out of temperature, since it was there overnight and they didn’t have any order or restock of the items in the cold hold unit. Food items were voluntarily discarded. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted.
-Observation: the dish shelf located next to the hand sink was missing end caps.
-Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).

(A) EQUIPMENT that is fixed because it is not EASILY MOVABLE shall be installed so that it is:
(3) SEALED to adjoining EQUIPMENT or walls, if the EQUIPMENT is exposed to spillage or seepage.
-Observation: caulk, in hand wash sink near coffee maker, it was coming out. Make sure to re-caulk sink on the wall.
-Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). |
