General Comments-During this inspection, all items cooked were ready-to-eat (RTE) for immediate service, their shell eggs are pasteurized and smoked salmon is RTE as well; -Menu has consumer advisory for RTE smoked salmon; -Food thermometer’s accuracy (PIC and EHS) was checked in ice bath to 32F; -No cooling was being done during this inspection;

Make sure to re-caulk sink on the wall. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).
