3-501.16A2 - Observed shelled eggs on counter at ambient temperature during inspection. Observed spring rolls temping at 45 degrees in stand up reach in cooler. Time temperature control safe foods being cold held shall be maintained at 41 degrees or below (P). CDI - foods were allowed to cool down in stand up reach in cooler since ambient air temperature in stand up reach in cooler was 38 degree f. |
