2-102.12 (A) PIC shall demonstrate knowledge by being a certified food protection manager. Observed no CFPM on-site during inspection. PIC stated certification was on its way to being completed but progress was halted.

4-101.19 Non FOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash, spillage, or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT, nonabsorbent, and SMOOTH material. Observed soiled towels at bottom of standing RIC. PIC stated towels are kept in unit to catch melting ice from unit thawing. PIC also stated towels are changed out weekly or as necessary. Increase cleaning and monitoring frequency. |
