General Comments- EHS provided facility with a TPHC written procedure to use for their buffet during events going forward. Following conversations with the PIC it was discovered that the buffets at the events only last between 30mins and 1.5hrs at most, leaving them well within the window for TPHC. PIC stated that they are already discard all items that go out to the buffet immediately following the end of buffet service and already keep temperature logs for the items that go out to the buffet line and hot box by the buffet line. EHS advised that they switch to TPHC going forward and add a section on their current logs for the start times that items leave the kitchen to go to the buffet line/buffet hotbox.
