General CommentsNo food borne illnesses reported recently per owner. Food thermometer and REHS food thermometer calibrated 32F in ice bath. Bleach sanitizer 50PPM at dishmachine and 100PPM at 3rd vat utensil sink. Time as a public health control used on cut cabbage and steamed broccoli. Cut cabbage to be discarded by 3PM and 3:15PM. Steamed broccoli discard time 3:35PM. Three ring binder with the following food educational brochures given: Food employee reporting agreement, Vomiting & Diarrhea Clean-up Plan, I'm gloving it, Food thermometer calibration tips, Food Code Fact Sheet #20, Time as a Public Health Control Guidelines, Prevent Bare Hand Contact, Top 5 CDC Risks Factors Contributing to Foodborne Illness, Employee Health Policy Requirements Poster, Proper Holding Temperatures, Multilanguage Wash Your Hands sticker, Cool Food Fast for Food Safety and Cooling log. Also, digital food meat thermometer and kitchen timer given to operator. It is very important to discuss employee health reporting requirements with food service staff often to help prevent food borne illness. Educational items were discussed. For request of reinspection, contact Mr. Oldham at 919-545-8479 or barry.oldham@chathamcountync.gov . Reinspection requested during exit interview. Make sure food employees get food safety training before reinspection. Nice labeling method for date marking used. Use date marking for cooked pork, etc. directly placed into 2 door RIF. An updated, labeled floor place of establishment needed. Onsite wastewater drain field needs mowing soon of high grass and tall weeds.

P Observed cooked noodles in deep portion in walk-in freezer first cooling parameter 86F and 30 minutes later 81F. Cooling rate of 16.3F was not met however noodles began cooling at 11:30PM. Food employee flipped cooked noodles over in the walk-in freezer and at 1:30PM noodles were 62F in the walk-in cooler. CDI.

P Observed sesame chicken 41F-48Fand cheese wonton (with cream cheese) 41F - 45F both overstacked passed the fill line of containers on prep cooler. PIC mixed the sesame chicken and all of it was voluntarily discarded. The cheese wonton top layer was voluntarily discarded that was over 42F or higher. Both items were placed in prep cooler for over 4 hours. Repeat cold holding violation. CDI.

Cold air must flow around the product to remove the heat. Pf Observed improper cooling methods used on cooked noodles beginning at 11:30PM. Cooked noodles were placed in walk-in freezer in a thick, portion so air did not reach the bottom portion of the cooked noodles. Once the cooling parameter did not meet minimum cooling rate, food employee flipped cooked noodles so bottom can cool. Cooling rate of 16.3F or great was not achieved during Time 1 and Time 2 in the walk in freezer. Only a cooling rate of 5F in 30 minutes achieved. By 1:30PM cooked noodles were below 70F within 2 hours of cooling. CDI.
