3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) - Observed eggs, sausage, cream cheese, butter and sliced cheese above 41F in flip top for Dunkin' Donut foods. Also observed oat/almond/lactose free milk above 41 in chiller unit. Maintain TCS foods in cold holding at 41°F or less. Temporarily Corrected - Foods discarded and TPHC will be used until refrigeration unit is repaired.
Pictures were taken of unit, but it appears that the turbo chef exhaust is directly blowing down on fliptop products in top of unit causing them to over heat. They will try to shield flip top from exhaust and see if that corrects the cold holding issue. They are monitoring flip top temps with a cookie sheet between the exhaust and flip top.
