Chopper, blender, and scoop sent back through dishwashing. Overall for the large volume of dishes they were all clean. Reviewed with dishwasher, CDI rewashed rinsed and sanitized. This is an improvement from the last inspection. |

Knucklehead line in steam well had corn bean mix that was ranging from 94-138F. Food was not fully reheated in the oven before being put in steam well. Reviewed procedures with PIC of Knucklehead and staff. CDI moved back to kitchen to get a 165F temp, this is a reheated item. |

4-204.112 A temperature measuring device sensor shall be located in a mechanically refrigerated or hot food storage unit to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit.
Two of the refrigeration units no longer have thermometers inside of them. PIC ordered them during the inspection and extras as replacements as needed. |
