3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. Observed pizza cooling my the prep sink in ambient conditions. Ensure rapid cooling methods are used and utilize walk in cooler/freezer to rapidly cool hot foods. Based on temperature and time recorded by PIC and observations of EHS, pizza was still meeting cooling parameters. PIC SOP did state to leave food out until 70F. CDI: EHS provided education and pizza was moved into the walk in cooler. -Pf |
