4-603.16 Rinsing Procedures: Washed utensils and equipment shall be rinsed so that abrasives are removed and cleaning chemicals are removed or diluted through the use of water or a detergent-sanitizer solution by using one of the following approved procedures. Observed cleaning residues left on food equipment that was run through dish machine. It appears that the detergent dispenser is continuously running throughout use. Drying agent was not observed running through dispenser. PIC has placed dish machine out of use. Wash, rinse, and sanitize dishes that have been run through the dish machine at three compartment sink prior to service. Establishment will be using three compartment sink until dish machine is working properly. CDI |
