4-204.112, Establishment now has a thermometer capable of obtaining temperatures in real time that does not have to be plugged into a computer to register. Thermometer was able to read temperatures accurately along side the inspector's thermocouple, inspector recommends obtaining a thin probe thermometer as well for temping foods thin foods such as the steak. |

NonFOOD-CONTACT SURFACES shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. *Observed shelving in prep reach that is chipping paint and rusted and observed plastic container holding items in poor repair. Repair or replace equipment as needed. Recommend having the prep unit serviced, owner is using the table as an ice table to help maintain temperatures, observed at 36F for internal food temperatures today. Prep tables shall function as intended by the manufacturer. |

Ensure floor is smooth and easily cleanable. Some flooring has been reattached, gap still present in front of the grill area. |
