Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf *Facility has variance to hold pizza sauce for 10 hours however did not have food labeled (large bin) for when prepped. PIC indicated prepped about 10 am for pizza sauce. CDI - Time placed on containers to ensure discarded properly. |
