Cooking logs are required to be maintained in establishment per approved written procedures. Observed par cooked wings in walk in during inspection that were not labeled as par cooked. Wings in walk in were all used during inspection. PIC stated that the logs from May and June were thrown away. Discussed maintaining logs in both restaurant and truck and keeping par cooked wings labeled as stated on written procedures. CDI 3-401.14 (E) Raw animal foods that are cooked using non-continuous cooking process shall meet cooling timeframes. -P Observed logs from March that documented wings on multiple days that did not cool to required temperatures in timeframes. No corrective actions were noted and wings were served. Discussed cooling process for wings and ensuring wings meet cooling parameters.
