Observed lettuce cooling in the walk in cooler (WIC) with tight fitting lids. Initial temperature check of lettuce was 62F and recheck was done an hour later and temp was still 52F.
When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the FOOD.
CDI -PIC cracked the lids on lettuce containers that were cooling so that they can cool faster. |
