General CommentsEstablishment uses TPHC for cold items, hot items, and sauces stored at prep line. Start and end times are tracked using day dot stickers. Written TPHC procedures are posted on wall next to holding units. Establishment sears ahi tuna without fully cooking, cools seared tuna to 41F or below in walk in cooler, and serves tuna cold. Establishment must store seared tuna as a raw product in walk in cooler, flip top cooler, and any other cold holding location. Establishment roasts kale to use as kale chip appetizer. Kale chips are then stored covered at room temperature. Establishment has been advised to roast kale until water content is too low to promote pathogen growth.
