5-202.13 Backflow Prevention, Air Gap. -P Observed the pipe under the prep sink below the flood level rim, which can cause cross contamination if backflow occurs. An air gap between the water supply and flood level rim shall be at least twice the diameter of the water supply inlet and not less than 1 inch. Suggested maintenance fix the issue. Also, under the 3 comp sink for the dish drain, the pipe is level with the flood rim. |

The light intensity shall be: (C) At least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, where employee safety is a factor. |
